Improvement of microbiological hygiene status in meat and cold cuts crafts businesses
Objective of the project was to improve the hygienic conditions in the areas of slaughtering and sausage production of small-scale producers. For this purpose a new type of surface coating with sol particles in the nanometer range (manufactured by the sol-gel process) was tested. The tests were carried out on machines and objects that are heavily exposed during production, such as plucking fingers to remove the feather from the poultry or the floor in front of the smokehouses. The coating should allow the conservation of the material, an anti-dirt adhesion and thus easy microbial cleaning with less effort.
In the project various questions regarding the use of the coating should be clarified through tests ( use of drinking water for effective cleaning, disinfection interval, durability of the coating, coating effort per year, reduction of discoloration (floor) and wearing (wheels)). Overall no uniform statement could be made about the effect of the coating. The microbiological counts varied depending on the examined object and area. As a positive benefit, the reduced adherence of dirt on the floors in front of the smoking chamber can be mementioned. However, since the project goal was only partially achieved, there was no commercial connectivity for the nano-coating within the project.
