Farm Cheese Quality – Development of a Sensory Quality Assurance System for Farm Dairies

Project description

Farm dairies are important contributors to regional value creation and offer high-quality, traditionally produced cheese products. Consistently high sensory quality is essential for their success. However, there is currently no practical system for sensory quality assessment specifically designed for farm dairies. Industrial testing procedures are often too expensive for small businesses and are designed for standardised mass-produced products. Farm dairies, by contrast, use natural and less standardised raw materials whose composition can vary throughout the year. This intentionally results in individual flavours and textures, but suitable standards and sensory assessment tools are lacking. The project therefore aims to develop a sensory quality assurance system specifically for farm dairies. It will include a digital quality assurance manual with instructions, checklists and visual references as well as a practical quality assurance kit containing sensory reference materials. Sensory quality standards for individual farm cheese varieties will also be developed and integrated into daily farm routines.
