Whole-Plant Broccoli Utilisation – Co-creative product development from whole-plant utilisation of organically bred broccoli varieties
In broccoli production, mainly the flower head is used, while leaves and stems are largely lost as by-products. This results in avoidable food losses and economic disadvantages for farms. At the same time, the range of varieties available for organic production is limited, making site-specific cultivation more difficult. The project aims to develop a new system for utilising the entire broccoli plant – flower, leaves and stem – creating additional value-adding opportunities for farms. Organically bred, open-pollinated varieties will be tested under practical conditions and further developed together with farmers through co-breeding. In addition, new processing and marketing pathways for the whole plant will be developed. The project aims to reduce food losses, strengthen variety diversity and increase the economic value generated by broccoli production, particularly for organic farms.
