RoggReis - Brandenburg's value-added network for milled organic rye as an innovative regional rice alternative

Project description

The aim of the project "RoggReis" is to create and establish a new sales market and value chain for organic rye from Brandenburg made out of rye. It is intended to contribute to the improvement of the economic situation of organic agriculture in Brandenburg. The development and production of an innovative and domestic rice alternative made from rye is intended to develop a new sales market with a focus on community catering. The product development aims to maintain cooking properties, consistency and color equivalent to conventional rice. Therefore, it is necessary to analyze the nutritional and technofunctional properties of the new product and to further develop it in terms of variety selection and processing methods.
